Two amateur cooks explore the world of cooking for a Crohn's and Colitis diet

As much as we enjoy sharing our kitchen creations with you on a weekly basis, we wanted to take a second to put IBD in perspective and introduce you to “C Cubed” (we aren’t talking about cubing butternut squash, we promise!)

First, let’s get down to the basic facts: Approximately 1.4 million Americans currently have Crohn’s Disease or Ulcerative Colitis. As many as 70,000 new cases of IBD are diagnosed in the United States each year.  IBD is found mainly in developed countries, more commonly in urban areas, and more often in northern climates.  However some of these disease patterns are gradually shifting. The highest Crohn’s disease incidence is reported in Canada while highest ulcerative colitis rates are reported for Denmark, Iceland, and the United States.[1]

We dream of a future without Crohn’s Disease and Ulcerative Colitis.  We dream of a future without invasive testing, never-ending doctor’s appointments, steroids, feeding tubes and surgeries. We dream of not having to remember to take our medication 3-5 times a day. Above all, we dream of a cure.  While we are dreamers, we are also realists.  Our dream won’t become a reality unless we get off our butts, leave our kitchen and DO SOMETHING to bring about change.

We are about to embark on the journey of a lifetime, or what we like to refer to as the I Be a fooDie “C Cubed” (Cook-Challenge-Cure).  That’s right, we are going to run a half marathon through Team Challenge to raise money for Crohn’s Disease and Ulcerative Colitis research.  We will be running the Virginia Wine Country Half Marathon at the beginning of June to get 13.1 miles closer to that cure.  This is not just about finding a cure. This is about improving the lives of the millions of people who suffer from both Crohn’s and Colitis.

I Be a fooDies after the race last year. Marnina raised $7,500. This year we are running together!

In order to cross the finish line, we have to raise at least $4,000. We cannot make it to the finish line without your generosity. Every $5, $10 and $20 makes a difference.  Every contribution, no matter how big or small, is 100% tax deductible and 82 cents out of every dollar donated go directly to IBD research.  Additionally, every person who donates will receive special recognition via airmail.
